Valentine’s Recipe: Bacon-Wrapped Filet Mignon

Valentine’s Day, a day to reflect and appreciate your loved one, is just around the corner, and what better way to spoil that special someone in your life than to treat them to a gourmet home cooked meal. Our favourite, Filet Mignon is an indulgent dish that you can easily make in your kitchen.

Bacon-Wrapped Filet Mignon with Creamy Mash and Steamed Greens

Ingredients

2 x 1.5 inch thick beef fillets
2 x rashers bacon
Toothpicks
Salt and pepper to taste
Olive oil

Creamy mash

2-3 medium potatoes
1 cup of milk, heated
2 tablespoons of butter
Salt and pepper to taste

Steamed greens

14 green beans
6 broccolini
Olive oil
Salt and pepper to taste

Method

1. Remove the beef fillets from the fridge 30 minutes prior to cooking.

2. Preheat oven to 180 degrees.

3. Wrap the round edge of the beef fillets in bacon. You may need to trim the bacon so it wraps the meat perfectly. Secure bacon with toothpicks.

4. Rub olive oil on the fillets and season with salt and pepper. 

5. Peel and cut potatoes into cubes and place in a microwave proof bowl. Add water and ensure potatoes are just covered.  Depending on your microwave, select either ‘potato’, ‘root vegetable’ or ‘vegetable’ setting.  Cook until potatoes are soft.
If you prefer to cook the potatoes on the stove, place cubes in a saucepan and fill with water covering the potatoes. Bring to the boil and cook until potatoes are soft. To see if your potatoes are cooked, use a fork to pierce, if it goes in easily, they are ready.

6. Heat saucepan on high.  Allow pan to become very hot, you will know it is hot enough when the pan starts to smoke.

7. Place the fillets onto the pan and allow to cook for 2 minutes each side.

8. Transfer the fillets into an oven proof dish and place in oven for 8-10 minutes, depending on how you like your steak cooked.

9. Place beans and broccoli into steamer and cook until slightly soft. Dress greens with a splash of olive oil and salt and pepper to taste.

10. To make mash, drain excess water from potatoes. Add butter, salt and pepper to taste and half of the heated milk on top of potatoes. With a potato masher, mash the potatoes until ingredients are combined. Continue to mash and gradually add more milk to the potatoes to get a silky smooth consistency. Keep adding until mash is smooth and potatoes stop soaking up the milk.

11. To plate up, allow beef fillets to rest for at least 5 minutes. Place filet mignon onto plate, serve up the steamed greens and dollop a generous amount of creamy mash on the side.
