Treat your taste buds with these two tasty, festive recipes

Christmas is a busy but exciting time of the year at McDonald Jones Homes. Our staff are meticulously wrapping up our work for 2014 (excuse us for the pun) and getting ready to achieve great things in helping families to discover their dream home in the coming year.

We understand that during this time of the year our newsletter reader’s calendars are often filled to the brim with parties, visitors, family gatherings, work events and other activities that celebrate the festive season and New Year. We’re taking some of the hassle out of planning for your Christmas parties with two great recipes that will help you cook up a treat in your McDonald Jones kitchen.

Our resident chef and mother of one of our Hunter Client Liaison Officers, Vicki, has shared with us some of her delicious baked treats that are easy to cook and perfect for entertaining friends and family for Christmas. Vicki often concocts goodies for us for our workplace meetings and events and we have to say, she is renowned for making magic in the kitchen.

Delicious Diabetic Fruit Cake

INGREDIENTS
3 cups mixed fruit
1 cup chopped walnuts
1 cup chopped dates
1 cup water
1 cup no sugar added fruit juice
2 cups self-raising flour
1/3 cup milk
2 tablespoons vegetable oil
1 tablespoon bicarbonate soda
1 teaspoon mixed spice

METHOD

  1. Preheat oven to moderate, 180C. Lightly grease a 20cm round cake pan. Line base and sides with baking paper.
  2. In a large saucepan, combine mixed fruit, walnuts, dates, water and wine. Bring to boil. Simmer for 3 minutes. Transfer to a large bowl. Cool for 10 minutes.
  3. Stir remaining ingredients into fruit mixture. Spoon into prepared pan. Bake for 50-55 minutes until cooked when tested with a skewer. Cool cake in pan for 5 minutes. Turn out onto a wire rack to cool completely.


Scrumptious Choc WeetBix Slice

INGREDIENTS
½ cup butter (125g)
1 cup brown sugar
1 egg
1 teaspoon vanilla essence
2 tablespoons cocoa
1 cup self-raising flour
½ cup coconut
4/5 crushed WeetBix
1 block plain chocolate

METHOD

  1. Melt butter in mixing bowl – 30-60 seconds depending on microwave.
  2. Mix through dry ingredients.
  3. Press mix into shallow 20cm square cake dish.
  4. Cook on medium in microwave for 6-8 minutes OR 15-20minutes in the oven.
  5. Melt chocolate and drizzle over the cooked mixture, place in fridge to set.
